Prende il nome dal "Kioke" una botte di legno di cipresso prodotta in Giappone dell'isola di Shodo in cui viene fermentata la soia. Questa birra dal colore mogano viene affinata in botte, che le dona intense ed eleganti note di cipresso ed una leggera sfumatura acidula, donandole un profilo aromatico unico.

Venduta con confezione. Maturata in botte di cipresso giapponese costruita in origine per la produzione di salsa di soia, ma mai utilizzata a tale scopo. Come le altre della stessa serie nasce da lunghi anni di sperimentazioni sull’ossidazione e ha la particolarità di poter essere bevuta anche a diversi giorni di distanza dall’apertura della bottiglia, come fosse un liquore. Inoltre dà il meglio di sé bevendola a temperatura ambiente. Color rubino molto intenso, non ha schiuma. Al naso sentori di caramello e datteri, in bocca si aggiungono l’umami, il legnoso e un lieve acidulo. Da meditazione dopo cena o in abbinamento a parmigiano molto stagionato. Cosa vuol dire Xyauyù? Chi è? Non era altro che il nome della figlia immaginaria della figlia di Teo Musso, fondatore di Baladin, quando questa aveva appena 3 anni.

Birra Baladin Xyauyù Kioke is een bijzondere bier dat het resultaat is van de combinatie van twee ambachtelijke tradities die verband houden met de kunst van het fermenteren. Dit bier is afkomstig uit Italië, uit de regio Piemonte, waar de brouwerij Baladin is gevestigd. Het bier wordt na fermentatie en 18 maanden rijpingstijd in de open lucht gerijpt in een nieuw Kioke-vat, dat nog nooit gebruikt is voor de fermentatie van soja. Het Kioke-vat is een kostbaar houten vat dat in Japan wordt gebruikt voor de productie van sojasaus. Birra Baladin Xyauyù Kioke heeft een diepe robijnrode, heldere kleur en geen schuimkraag. De geuren bevatten subtiele tonen van bessen, dadels en karamel, met een vleugje wierook. Bij het nippen komen de houtachtige en frisse tonen van de bessen naar voren, gecombineerd met een prachtig delicaat van harsachtige accenten en een vleugje umami. De afdronk is kruidachtig. Dit bier heeft een alcoholpercentage van 14%.

Del colore rubino carico, piatta, limpida e senza schiuma. Al naso, profumi delicati di bacche di cipresso, datteri e caramello con accenni leggerissimi di incenso. In bocca, toni legnosi e freschi di cipresso si sposano splendidamente con leggere note resinose, sapide e di umami per chiudere con un finale vagamente erbaceo, amaricato e acidulo. Al termine dell’Expo 2015, Teo riceve in dono la botte che nel padiglione del Giappone aveva rappresentato la tradizione dei mastri costruttori delle botti per la fermentazione, in particolare, per la produzione di salsa di soia. Ecco allora farsi strada l’idea di una Xyauyù affinata nella pregiata botte chiamata Kioke. Kioke è priva di chiusura, prodotta in Giappone nell’isola di Shodo da Yasuo Yamamoto (Yamaroku Shoyu). Da tutto ciò nasce, dunque, questa birra, che unisce due grandi tradizioni artigiane legate al mondo della fermentazione. La Xyauyù, già fermentata e maturata per oltre 18 mesi, viene affinata a cielo aperto nella botte di Kioke nuova (in cui non è stata fermentata la soia) la quale le dona delicate note resinose e una leggera sfumatura acida, creando un profilo aromatico unico e originale. La produzione delle botti di Kioke sta scomparendo in Giappone (sostituite da fermentatori in acciaio inox) e per mantenere viva la tradizione Yasuo Yamamoto, ultimo rappresentante di una famiglia di produttori di salsa di soia, ha deciso di iniziare a produrle nel suo laboratorio con l’intento di sensibilizzare i colleghi e i bottai. La birra vuole essere veicolo di condivisione di questo tema assolvendo ad un compito fondamentale di un prodotto artigianale: raccontare attraverso l’emozione e la condivisione.

Der Kioke ist ein offenes Zypressenholzfass, das von Yasuo Yamamoto (Yamaroku Shoyu) in Japan auf der Insel Shodo hergestellt wird und zur Fermentation von Sojasauce verwendet wird. Xyauyù entstand in Piozzo, Italien, in der Bauernbrauerei Baladin, aus Teo Mussos Wunsch heraus, das Universum der Oxidation zu erforschen.

Nachdem das Bier 18 Monate lang vergoren und gereift ist, reift es im Freien in einem neuen Kioke-Fass, das also noch nie für die Fermentation von Soja verwendet wurde. Das Fass verleiht harzige Zypressennoten und eine leicht säuerliche Note für ein einzigartiges aromatisches Profil.
