Instalados en Bierghes, en el Valle de Senne, Gueuzerie Tilquin es el único blender o mezclador de lambics en la zona belga de Valonia. Se dedican a comprar los mostos recién hechos de diferentes productores de la región de Pajoteland en Bruselas. Estos mostos se trasiegan a diferentes barricas de roble para su fermentación y maduración durante 1, 2 o 3 años. Las lambics obtenidas son mezcladas a su vez para crear diferentes Gueuzes.

La gueuze que os presentamos se llama Tilquin – Oude Quetsche a l’Ancienne. Se obtiene por la fermentación espontánea de ciruelas moradas frescas de la variedad Prune de Namur o de Alsacia. Para su elaboración se mezclan lambics de 1, 2 y 3 años que maduran durante 4 meses. No se filtra ni se pasteuriza y se vuelve a fermentar una vez embotelladas por un periodo de tres meses. Las lambics utilizadas provienen la maduración en sus propias barricas de los mostos elaborados por Boon, Cantillon y Lindemans.

Tilquin está considerado como uno de los mejores mezcladores de lambic del país. Esta gueuze con ciruelas es una buena prueba de ello. Destacaremos su equilibrio entre la fruta, la madera y la acidez, así como su fragante aroma que nos recuerda a brandy de ciruela.

The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

Dit bier is niet gefilterd en niet gepasteuriseerd. Na botteling hergist het bier op de fles gedurende minimaal 3 maanden. De lambieken die worden gebruikt, zijn gegist en gerijpt in eiken vaten in de stekerij en zijn afkomstig van verschillende brouwerijen, waaronder Boon, Lindemans, Girardin en Cantillon. De smaak van Oude Quetsche Tilquin is licht zuur en heeft een fruitig en rond karakter. Dit maakt het bier mogelijk toegankelijker voor niet-ervaren bierdrinkers. Het vertoont ook een subtiele droogheid, die doet denken aan de pruimenhuid. In de neus kan een heerlijk parfum van pruimenbrandewijn worden waargenomen. Deze unieke combinatie van smaken en aroma's zorgt voor een boeiende en verrukkelijke bierbeleving die liefhebbers van pruimen en spontane gisting zeker zal bekoren.
