In questo batch ad edizione limitata effettuiamo, al termine della maturazione in botte, un dry hopping di luppolo Cascade per dare ulteriore vigore alle componenti agrumate, floreali e speziate (già presenti nel bouquet aromatico). Piè Veloce Brux Cascade è un’altra interessante veste della nostra Brett Ale Bruxellensis: maggiormente diretta e dall’aromaticità più esplosiva!Piè Veloce è il nostro progetto brassicolo dedicato ai lieviti della specie Brettanomyces (definiti “selvaggi”) e si declina in due birre, entrambe della tipologia Brett Ale: questa, per cui abbiamo scelto il ceppo Bruxellensis, e sua sorella in cui utilizziamo il Lambicus.
L’epiteto di Achille, eroe celebre per la sua velocità nella corsa, simboleggia che all’interno dei cicli produttivi lenti che caratterizzano Cà del Brado, queste sono le nostre birre a più rapida maturazione. Nascono infatti per essere bevute fresche (quando l’esplosività aromatica è all’apice) o possono essere lasciate invecchiare, per scoprirne l’affascinante evoluzione nel tempo.Il mosto della Piè Veloce Brux è realizzato con un’importante percentuale di cereali succedanei (frumento e segale) e mediante una luppolatura oculata di stampo americano, sia in amaro che in aroma. La fermentazione (effettuata fin dalla primaria con brettanomiceti Bruxellensis) e la maturazione (circa due mesi) avvengono direttamente in legno: prevalentemente all’interno di grandi botti (3.000 lt) che in passato ospitavano vino. Ne segue un successivo affinamento in bottiglia o in fusto per dare modo al Brett di continuare ad esprimersi.L’utilizzo dello specifico ceppo di Brett Brux va a compenetrarsi con la luppolatura scelta regalando note fresche di frutta bianca, agrumi e reminiscenze tropicali, assieme ad un delicato tocco acidulo e alle intriganti componenti funky tipiche del brettanomyces (riconoscibili fin nella birra giovane, per poi rinvigorirsi con l’affinamento nel tempo).Un’accentuata secchezza, una gradevole mineralità e un amaro presente ed elegante conferiscono alla birra una grande bevibilità.

Piè Veloce is Ca' del Brado's brewing project dedicated to yeasts of the Brettanomyces species (defined as "wild") and is divided into two beers, both of the Brett Ale type: this one, featuring the Lambicus strain, and its sister in which Ca' del Brado use the Bruxellensis strain.
