Brauerei Kemker Aoltbeer 5-2021 è un blend di birre realizzate appositamente per essere maturate minimo 14 mesi in botti di rovere.
Questo dettaglio fa si che la birra risultante abbia delle caratteristiche precise dovute ai fenomeni ossidativi che si manifestano durante questa lunga maturazione.
Note vinose, balsamiche, minerali e citriche danzano nel bicchiere insieme agli aromi terziari appresi in cantina: legno umido, cuoio, polvere.
L’elevata attenuazione fa si che la birra risulti al palato secca e leggermente astringente, la carbonatazione fine ma avvertibile contribuisce alla freschezza della bevuta.
Una birra complessa ed equilibrata ben elaborata di alto livello.

La macerazione in compagnia degli acini dura 2 mesi, successivamente si passa alla svinatura con conseguente maturazione in botte per oltre 5 mesi!
La birra è potente e strutturata, gli aromi sprigionati spaziano da note fruttate a note vinose, legnose e di cantina.

Successivamente vengono aggiunte alla birra delle vinacce di uva Dornfelder provenienti da un produttore della Franconia.
Le vinacce rimangono a contatto con la birra per 2 mesi, dopodiché si procede alla torchiatura e alla rimessa in botte per altri 7 mesi.
Da questa lungo processo di produzione ne deriva una birra complessa dall’acidità contenuta e piacevole.
Una nota di merito va alla resa della frutta e conseguentemente all’aspetto visivo, olfattivo e gustativo!
Di colore rubino incantevole ed intenso, lascia auspicare che all’olfatto e al gusto questa birra sia fortemente fruttata.
La complessità di aromi infatti è notevole, si spazia da sensazioni vinose a fruttate a quelle di cantina polverose, terrose e legnose.
La birra risulta ben attenuata, il corpo è leggero e la carbonatazione morbida, leggermente astringente.
Birra in continua evoluzione nel tempo.
