Dal birrificio: “È grazie alla nostra esperienza pluriennale e al nostro nuovo birrificio costruito nel 2013 che possiamo spingere i confini delle birre Lambic tradizionali. Questa esperienza e questi strumenti ci permettono di andare oltre e creare Geuze completamente nuove ed allo stesso tempo di grande complessità ed equilibrio. Queste diverse edizioni "Black Label" hanno ciascuna un gusto molto originale ma sono tutte sinonimo di vera pienezza con un retrogusto secco. Nel 2015, in occasione del 40° anniversario della Brouwerij, abbiamo rilasciato la prima edizione della nostra Oude Geuze Boon Black Label. Produciamo questa birra speciale attraverso una selezione di Lambic provenienti da botti di rovere (i nostri foeder) con il più alto grado di fermentazione: quasi tutti gli zuccheri fermentabili sono infatti fermentati in esse. Prima che la “Black Label” lasci il birrificio, matura nelle nostre cantine per almeno un altro anno. L'altissimo tasso di fermentazione rende l'Oude Geuze Boon Black Label estremamente secco . Allo stesso tempo, questa birra è molto corposa, grazie alle componenti create dai lieviti selvatici. Poiché questa speciale variante continua ad essere molto richiesta, produciamo una nuova edizione ogni anno con un proprio numero ed etichetta ed ogni volta è diversa. Ottenere un finale così secco ed una così elevata corposità è stata una grande sfida ma il risultato è straordinario: una Oude Geuze piacevole, complessa ed estremamente equilibrata”.

Oude Geuze Boon Black Label es la gueuze más seca que hemos hecho. Combinar un sabor con cuerpo con un grado de fermentación de casi el 100% fue un gran desafío. Esta gueuze tiene un cuerpo dorado claro con carbonatación viva, acidez equilibrada y sabores de manzana verde y pomelo. Esto se completa con un largo postgusto seco hasta los huesos. Los Lambics utilizados para esta mezcla han envejecido durante 1, 2 y 3 años en barricas de roble. Elaborada en Lembeek, el pueblo que le dio su nombre a Lambic.
