‘Barrel aging is as much art as it is science, and oftentimes the resulting beers are much more than simply the sum of their parts. As our chocolate Chipotle Stout matured in freshly emptied Kentucky bourbon barrels, the heat from the Chipotle peppers mellowed and the chocolate notes intensified. After aging for nearly two years, we decided this beer was perfect. Velvety smooth notes of bittersweet chocolate and vanilla from the oak are followed by a robust earthiness from the peppers and a long, rich finish.’
