Strong, whisky-accented mixed ferm Stout brewed with molasses and matured in wood for two years. Whisky and dried fruit with coffee and dark chocolate notes on the nose develop and expand into treacle toffee, smoky coffee and dates, with
brett funk appearing in the form of blueberries and blackcurrant. After two years with wild yeast it is dry, but a high ratio of unfermentable sugars means itâs also sweet and smooth, coating the mouth and lingering and evolving on the palate. Carbonation is light and the finish is long, allowing enjoyable exposure of the harmonious elements. Refined, complex but relatively easy drinking and great paired with a hunk of cheddar as well matured as the beer.
