The Goose is Loose is een levendige gose gebrouwen met fruit dat traditioneel in Deense zomers wordt geoogst: kruisbes, rode bes en zwarte bes. Deze zure bessen worden in evenwicht gehouden door een restzoetheid, die wordt bereikt door het fruit na de fermentatie toe te voegen en het bier vervolgens te pasteuriseren. Het resultaat is een matig rood bier met een lichte waas en een delicaat roze schuim.
Het aroma is intens bessen-forward, met tonen van rode en zwarte bes, subtiele kruisbes en hints van Concord-druif, citrus, limoen, honing en hibiscus. In de mond presenteert het een lichte zoutheid, matige zoetheid en een uitgebalanceerde zuurheid met een subtiele bitterheid. Het medium body biedt wat adstringentie, gemiddelde koolzuur en een matig watertandende afdronk, waardoor deze gose zowel verfrissend als complex is.
To Ol:To Øl is een jonge Deense ambachtelijke bierbrouwerij opgericht in 2010. Bij To Øl maken we eigentijdse bieren. We brouwen een breed scala aan krachtige, provocerende, frisse en bloemige bieren; hoppige, evenwichtige en complexe bieren zowel licht, donker, sterk en eenvoudig. To Øl bracht het eerste commerciële bier uit in 2010 en de brouwerij To Øl werd opgericht. To Øl kwam in 2012 op de lijst van de Top 100 beste brouwerijen ter wereld van Ratebeer en in 2014 werd To Øl bekroond met de 9e beste brouwerij ter wereld.
