A Lambic abban különbözik a legtöbb sörtől, hogy a Zenne-völgyben őshonos vad élesztők és baktériumok erjesztésével, nem pedig a gondosan tenyésztett sörélesztő-törzsekkel történik az erjesztés. Ez az eljárás adja a sör jellegzetes ízét: száraz, boros és almaboros, gyakran savanykás utóízzel. A típus a gyümölcsös változatai ismerősen csenghetnek. Az egyik a Framboise, mely málnával együtt savanyított sör valamint a Kriek, ami meggy hozzáadásával készül, de ezek mellett igen népszerű alapanyag az alma, szőlő és a szilva is.

We used two- and three-year lambikken only, rendering the weighted average age of this blend to more than 26 months. The final fruit intensity clocks at more than 584 grams of grapes per litre. Almost 80% of the cereals for the five brews were sourced with our local farmers.
