on the lemon character, we took a super zippy kettle sour, with a bunch of rolled oats, malted wheat and a whack of lactose, and secondary fermented it on lemon puree. Trying to find balance between sweetness and the intensity of the lemons, to result in flavour more than mouth puckering acidity. 6.5% 500mL Less
