It turns out, Hunterville is a pretty funky place. Home to the first-ever commercial brewer?s yeast isolated from the New Zealand wilderness ? that goes by the name of Wilding. A funky, fruity farmhouse ale, with a hint of spice, light malt, and a subtle hoppy finish.
Earlier this year Froth Technologies approached us asking if we wanted to be involved in this project and we jumped at the opportunity to be the first brewery to use this new, native, commercial beer yeast isolate. Froth Technologies captured this yeast with an air trap on the banks of the Rangit?kei River, and isolated, nurtured, and analysed it with the help of scientists at Callaghan Innovation. It truly is a once-in-a-lifetime opportunity to be involved with something like this.
