The beer is somewhere between a bright straw and golden marmalade colour. It has a stiff froffy head, as you can see, and caters for both New England IPA and West Coast lovers alike. This is due to the New England yeast strain and moderate bitterness from the Pilgrim hops and perceived bitterness from the dry hops. Some may say it is a traditional English IPA due to the heavy usage of Goldings and Bramling Cross. These hedgerow hops offer up a vibrant berry and a subtle spice character. However, the New England yeast strain brings about more tropical notes that pairs nicely with the sweet malt profile, making way for candied fruit flavours.
(If you haven’t grown tired of IPA sub categories may I posit a half-jokey offering and call it an East End IPA, or abbreviate it to an EEIPA, if you will. No? Okay. Fair enough). For me the flavour that prevails on the palate are juicy and bitter citrus fruits, sweet blackcurrants and a resinous pine note. The second dry hop of Chinook certainly brings that zingy orange citrus and pine like impression.
