Saint Amatus, also called St. Aimé, was a Benedictine monk. He took the defense of the lesser man who was exploited by the Merovingian king Thierry III. In Belgium, Oostvleteren is the only parish to patron St Amatus as saint. Struise started brewing at Deca in Vleteren early 2006, we ankered ourselves by starting the development of our own micro brewery in Oostvleteren during 2009. With this adventure being on the rails, we thought the making of Saint Amatus 12 was as evident as can be. The terrific artwork was brought by our narcissistic artist Carlo Grootaert.

El concepto "Struise" se basa en la creatividad, la innovación, la calidad, la sostenibilidad y la amistad. Comenzaron su viaje al mundo de la cerveza en 2001. Todo comenzó en De Noordhoek, una granja de avestruces en medio de los campos de Lo-Reninge. Allí vio la luz la primera cerveza. Struise Witte se convirtió en una cerveza de trigo a la antigua usanza. "Struise" proviene de la jerga flamenca para referirse al avestruz. Por lo tanto, el escudo de armas representa un avestruz orgulloso rodeado por un casco de caballero, un escudo y plumas. En 2003 decidieron comercializar su última creación, una Dark Strong Ale belga llamada Pannepot. En aquella época aún no tenían instalación propia, por lo que siguieron viviendo como cerveceros gitanos. Comenzaron en la cervecería Coulier y más tarde en la cercana cervecería Deca en Woesten. En 2009 se mudaron a una encantadora y antigua escuela en Oostvleteren, donde elaboran cervezas de forma independiente desde 2012. A la cabeza del equipo de Struise se encuentra Urbain Coutteau como cervecero y jefe de operaciones. Dion Vandeweghe refuerza el equipo como cervecero y curador de la sala de barricas y Tom Coutteau como asistente de elaboración de cerveza.
