Ca’ del Brado viert ieder jubileum met een nieuw bier. Anniversario 2021 is een acht maanden vatgerijpte en met Brettanomyces Lambicus vergistte sour ale, waarin de Italiaanse grootmeesters cascara hebben laten ronddrijven. Deze schillen van koffiebonen (geleverd door Trevo Coffee Roastery) zorgen voor een petiet zoetje tussen de zurigheid. De rijping in het vat waarin eerder wijn zat, doet de rest voor je. La speziatura trova spazio nel bouquet aromatico e nel retrogusto con suggestioni quali frutta rossa, ibisco, reminiscenze di tabacco e caffè. L’acidità variegata e le pungenze dei (frutta gialla, albicocca acerba, animale, cantina), caratterizzano questa birra ricca di sfumature e di grande evoluzione nel bicchiere.

Mixed-fermentation sour ale infused with local herbs and spices, fermented with Brettanomyces Lambicus yeast, and blended with a small amount of vintage saison.

The base beer underwent primary fermentation using Brettanonyces Lambicus, matured in wooden vats for about 8 months, followed by a cold infusion of cascara (the skin and dried pulp of the coffee plant drupe).

The spiciness finds space in the aromatic bouquet and in the flavour, with notes of red fruit, hibiscus, and hints of tobacco and coffee.

Created to celebrate Ca' del Brado's fifth anniversary. This event takes place in winter, embracing a fabulous fairy tale imagery upheld by the whispers of the cold, steeped in wild legends and woodland mysteries on the edge of the Bolognese Apennines.
