Az ALE-khez felhasznált élesztőtörzsek magasabb hőmérsékleten dolgoznak mint a lager élesztők, hamarabb elvégzik a munkát, valamint pihentetésre (ászokolás) sincsen szükség.
Ezekre az élesztőkre jellemző, hogy sokkal több észtert, vagyis íz és illatanyagot termelnek. Ennek köszönhető, hogy ezek az italok sokkal markánsabb íz és illatélménnyel rendelkeznek.
