For this small batch Druif, we macerated fresh Gelber Muskateller pomace from Austria on three-year old 3 Fonteinen lambik only, for more than four weeks. The pomace went through the first wine fermentation, rendering grape skins, pits and stalks wonderfully fragrant. The final proportion is 515 grams of pomace per litre of finished druivenlambik. The weighted average age of this Druif on the moment of bottling was 35 months. More than one third of the grains used for the lambikken, was sourced in our Cereal Collective.
