For this Pruim, we macerated hand-picked Limburg Belle De Louvain plums for four months on a blend of young lambik, as well as three- and four-year-old lambikken. The oldest lambik in this blend was brewed by us in early 2019. The weighted average age of the blend at bottling was over 31 months. The final fruit proportion is 300 grams of Belle De Louvain plums per litre of Pruim. More than two-thirds of the lambikken were brewed with Pajottenland cereals sourced from our own Cereal Collective.
