Spontaneous Danish Wild Ale with Yellow Peaches

"Our friends at casey brewing & blending visited us from their home in the rocky mountains of colorado for the first baghaven wild ale celebration in february 2020. While they were in copenhagen, we collaborated on a special beer to mark the occasion: symbol of renaissance, our first ever 100% spontaneously fermented fruited danish wild ale.

We created a base wort of organic danish barley and spelt malts enhanced with danish raw spelt and heirloom raw wheat. Aged hops went in at the beginning of a long boil, and fresh french strisselspalt hops were added at the end.

The next step is where the magic happens. We transferred the wort to our open koelschip and left it to cool and collect wild yeast and bacteria overnight under the danish moon. In the morning, we racked the wort to barrels and tucked them away to spontaneously ferment.

After two summers of rest in the barrels, we added in late harvest yellow peaches imported from a small family farm in spain. These big peaches are extra juicy and sweet, with a subtle caramelized sugar flavor perfect for blending with this complex spontaneous danish wild ale.

After naturally conditioning in the bottle for nearly a year, symbol of renaissance is now ready for you to enjoy. Bottles will be available at the baghaven tasting room on refshaleen from friday, 16 september.
