The name lager derives from the German word ‘lagern’ which means ‘to store‘. In the early 1800s, German brewers began to store beers in cold cellars for extended periods of time. After a preliminary fermentation, the beer would
through a ’lagering’ period at low temperatures for a few weeks or several months. some brewers would pack caves in the Bavarian Alps with ice from the mountains and lakes, so that they could store their beer there over the summer months. During this period, the yeast and the other substances would settle. This gave the beer a mellow and crisp taste, while simultaneously turning it into a clear golden color. Nowadays, lager is the most widely available, and consumed beer.
